Baking is one of the oldest and most elemental of the culinary arts. But
that doesn’t mean there’s anything easy about it. For old-country style
sour doughs and long-fermented loaves, Billy’s has all your yeasty,
flour-y favorites. “There are no sugars and no oils in our breads,” says
owner and baker Billy Hollis. “Artisan crusty breads -- that’s really
the cornerstone of our bakery.” Billy’s also does a big business in
cakes, fresh bagels, croissants, scones, cupcakes. As well as now
offering deli sandwiches made on that excellent bread, and salads to go.
“We find a lot of people coming to our bakery looking for multi-grain
bread, whole wheat, no oils and no preservatives,” says Hollis.
“Everybody’s watching real carefully what they eat. They don’t want
anything processed. If you’re going to have bread, you should have
artisan bread. We make each loaf by hand. I’m the neighborhood bakery
for everybody. People -- bread lovers -- come from all over.”
