You don't have to be a vegetarian to enjoy a vegetarian restaurant. Claires Corner Copia owner Claire Criscuolo says her restaurant isn't expressly for vegetarians. "Most of our customers are not vegetarians," she says. "I thought that if we had a vegetarian restaurant, even people who ate meat, if we made the food good enough, they'd be interested enough to try it." The menu is full of familiar dishes and flavors, all made without any meat. "Our menu really evolved from our specials board. If a special was special enough, it made it to the big board," says Criscuolo. "Now we're out of big board space." They also take requests from their customers, who are intensely loyal. Claire's will start offering a couple of new sandwiches and salads coming up, and Claire herself is anxiously awaiting the return of growing produce in her own garden. But she can't do it alone. "Our staff rock, without a doubt," she says.
