Carbone’s is an Italian-cuisine legend in Hartford. One taste of their impossibly creamy pollenta or a serving of flavorful pasta Bolognese, and you’ll understand. And chef/owner Vinnie Carbone can turn out such dishes for banquet-size feasts on site or take the show on the road with the Carbone’s catering operation. “We custom-built a vehicle that allows us to cook fresh all of our products,” says Carbone. “We try to be able to duplicate what we do in the restaurant on the road.” Most of their catering jobs are in the Greater Hartford area, but occasionally an unorthodox opportunity presents itself. “One time I did a rodeo,” says Carbone.
